Coffee does not begin with us.
It begins at origin, with producers, cooperatives, and exporters who work in variables we do not control: soil, rainfall, altitude, labor, and time.
Our responsibility is selection.
Who We Work With
At the moment we source primarily through:
Coffee Shrub (the wholesale division of Sweet Maria’s)
These partners specialize in traceable, quality-focused coffees. They maintain relationships at origin, provide detailed lot data, and prioritize transparency around processing and pricing structures.
We choose importers who value clarity over marketing language.
What We Look For
We cup extensively before purchasing.
We prioritize:
Clean processing
Structural sweetness
Defined acidity
Balance over exaggeration
Lots that express place clearly
We are not buying for trend cycles or novelty alone.
We are buying for longevity in the cup.
Grade & Quality
As an example:
When we source Grade 1 Ethiopian coffees, that classification is not decorative.
It indicates:
Minimal primary defects
Careful sorting
High preparation standards
Quality at origin determines what is possible in roasting.
We cannot roast in what is not already there.
Green Cost & Responsibility
Green coffee pricing reflects labor, risk, and agricultural investment.
We do not chase the lowest price per pound. We look for value that reflects effort and quality.
Specialty coffee is expensive because it is difficult.
Transparency does not mean perfection, it means clarity about the chain.
When available, we provide:

Region and altitude
Processing method
Harvest year
Importer
If we cannot verify it, we do not imply it.
